Cheesy Chili Hash Brown Bake

This is delish!!  I found this recipe in a Southern Living magazine.

Ingredients
2 pounds browned ground beef
1 (15.5 oz.) can Manwich Original Sloppy Joe Sauce
1 (15 oz) can Hormel Chili with Beans
15 oz package frozen country style shredded hash browns
2 cups shredded Cheddar Cheese

Instructions:
Preheat oven to 425 degrees. 
Mix sloppy joe sauce, chili, and browned ground beef.
Pour chili mixture into a 9x13 pan. 
Top with frozen hash browns
Bake, covered at 425 degrees for 30 minutes.
Uncover and bake for 10 minutes until the top is browned and crisp.
Sprinkle with cheese and bake 5 more minutes or until cheese is melted.

Chocolate Pudding Cake

Preheat oven to 350 degrees F and place rack in center of oven. Butter, or spray with a non stick cooking spray, an 8 inch square baking dish.

Cake:
3/4 cup all purpose flour
1/4 cup cocoa powder
1/4 teaspoon salt
2 teaspoons baking powder
1 large egg
4 tablespoons unsalted butter, melted
1/3 cup granulated white sugar
1/3 cup milk
1 teaspoon vanilla extract

Put together the Cake:
In a bowl, mix flour with the cocoa powder, salt, and baking powder. In another large bowl, whisk the egg with the melted butter, sugar, milk, and vanilla extract. Stir the flour mixture into the egg mixture until combined. Spread the batter evenly onto the bottom of the prepared pan.



Pudding Sauce:
1 1/2 cups strong cold coffee
1/3 cup granulated white sugar
1/3 cup light brown sugar
1/3 cup cocoa powder

Put together the Pudding Sauce:
In a separate bowl, stir together the white sugar, brown sugar, and cocoa powder.

And It All Comes Together:
Sprinkle the sugar/cocoa mixture evenly over the cake batter. Gently pour the coffee over the cocoa mixture. Bake for about 25 minutes or until the cake is puffed and just beginning to pull away from the sides of the pan. Remove from oven and place on a wire rack. Serve warm or at room temperature, either plain or with vanilla ice cream.
Leftovers can be covered and stored in the refrigerator. Reheat in microwave.

Meatloaf

Ingredients
2 pounds ground beef (lean)
1 cup Quaker Oats
1 envelope onion soup mix
1/2 cup catsup
2 eggs, lightly beaten
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper

Combine all ingredients in large bowl; mix thoroughly. Place in a 9x13 pan and shape into a loaf.

Topping (optional)
Mix together:

1 cup of (Heinz) ketchup
4T of brown sugar
4T vinegar
2T Worchestershire Sauce
Spread evenly over the top of the meatloaf
Lay bacon strips across the top of the sauce

Heat oven to 350°F. and bake for approx. 1 hour 15 minutes or until meatloaf is not pink in center and juices show no pink color. Let stand 5 minutes before slicing.

Chex Mix Puppy Chow

Ingredients:
9 cups Chex Cereal
1 cup chocolate chips
1/2 cup peanut butter
1/4 teaspoon vanilla extract
1 1/2 cup powdered sugar
Large paper grocery sack

Directions:
Put cereal in a large, large bowl (HUGE).  In a saucepan melt chocolate chips, peanut butter and butter over low heat. When everything is melted remove from heat, and stir in vanilla extract.

Pour over Chex cereal and gently toss to coat the cereal well.

Put powdered sugar in a paper grocery sack  Pour the coated Chex cereal into the paper sack and gently shake to completely coat the cereal with powdered sugar.  (Take it outside or to your garage to shake, the powdered sugar leaks out the seams of the sack)

Tortilla Pinwheels

Ingredients

4   8-inch flour tortillas
16 slices ham (or 16 slices salami)
grated cheese
1 container spreadable cream cheese
2 tablespoons mayonnaise or 2 tablespoons salad dressing
1 tablespoon mustard
chopped fresh parsley (or a pinch of dried)

Directions
Place tortillas on flat surface.
In bowl, combine mayonnaise and mustard.
Set aside.


Spread each tortilla with thin layer of cream cheese.
Spread cream cheese with teaspoon or so of mayonnaise mixture.
Sprinkle with chopped parsley.
Top with slices of meat to cover tortilla (slices may overlap slightly).
Sprinkle with grated cheese.
Roll up each tortilla, jelly-roll fashion, being careful not to squeeze out filling.
Wrap each roll securely in plastic wrap.
Chill at least a couple of hours.

When ready to serve, slice each tortilla roll-up into 1/2-inch slices. I use an electric knife

Farmhouse Barbecue Muffins

Ingredients

1 tube (10 ounces) refrigerated buttermilk biscuits
1 pound ground beef
1/2 cup ketchup
3 tablespoons brown sugar
1 tablespoon cider vinegar
1/2 teaspoon chili powder
1 cup (4 ounces) shredded cheddar cheese

Directions
Separate dough into 10 biscuits; flatten into 5-in. circles. Press each onto the bottom and up the sides of a greased muffin cup; set aside.

In a skillet, cook beef over medium heat until no longer pink; drain. In a small bowl, combine the ketchup, brown sugar, vinegar and chili powder; stir until smooth. Add to meat and mix well.

Divide the meat mixture among biscuit-lined muffins cups, using about 1/4 cup for each. Sprinkle with cheese.
Bake at 375° for 18-20 minutes or until golden brown.
Cool for 5 minutes before serving.
Yield: 10 servings.

The birth of a new calf always amazes me.  The baby is conceived and this tiny thing is nurtured inside its mother for 9 months.  The baby is born, it instinctively takes a breath, he snorts the mucus out of its own nose. How does it know to do this?  The mother immediately goes to work cleaning the baby and nudging it to its feet.  The baby walks wobbly to the udder and after a few tries he latches on and begins to feed.  The mother continues her due diligence with cleaning and nurturing the little calf.  Instinctively she is protective and puts herself between us and her new little miracle.  It warms my heart to see mother and baby, I give thanks to God, he is the only one who deserve the credit and praise.  This is Gods’ work, no doubt about it!

Morning Java

Hello, my name is Laura and I am a coffeeholic.  I know, it's a problem, but I can't find a support group that will help me out.  I drink coffee all day, it is my drink of choice.  If it's after 3:00pm, I switch to decaf.  Recently a good friend introduced me to a different spin on coffee.....add a scoop/packet of Hot Chocolate mix your coffee. It's heaven! I'm a gonner....I am HOOKED! Sometimes enablers are nice to have around, like a warm fuzzy blanket on a cold winter day.  I love you Sheila!

I love it when the calves run through the pasture and kick up their hooves!  It makes me smile. They are so happy when PaPa Bear opens the gate and lets them go......and boy do they GO!

Rounded Heel Knitted Slipper Pattern


This pattern has evolved from other knitted flat slipper patterns.  The original slipper pattern can be found on Peppermint Mocha Mama's blog.

Materials:
2 skeins of worsted weight yarn
Size 7US knitting needles
Darning needle

Instructions:
**You will be knitting with 2 strands of yarn held together throughout the pattern.
**Always slip the first stitch in every row as if to purl, this makes a nice edge.

Cast on 25 stitches (Leave a long tail to sew up heel of slipper)


Rounded Heel
Row 1: sl1, Knit across
Row 2: sl1, K10, Kf&b1, K1, Kf&b1, K11 (27sts)
Row 3: sl1, Knit across
Row 4: sl1, K10, Kf&b1, K3, Kf&b1, K11 (29sts)
Row 5: sl1, Knit across
Row 6: sl1, K10, Kf&b1, K5, Kf&b1, K11 (31sts)
Row 7: sl1, Knit across
Row 8: sl1, K10, Kf&b1, K7, Kf&b1, K11 (33sts)
Row 9: sl1, Knit across

Row 10: sl1, K10, P1, K9, P1, K11
Row 11: Sl1, Knit across

Repeat Rows 10 & 11 - 10 times (total of 31 rows, ending with Row 31)




Body of Slipper
Row 32: Sl1, *P1, K1*

Repeat Row 32 & 33 until you reach the length you want.
(at this point if you wish to avoid seaming, you can knit in the round)

HINT: For my size 9(US) ladies foot, I knit a total of 61 rows before I started my decrease rows.



Decreasing the Toe
Row 1: Sl1, *P2tog, P1*
Row 2: Sl1, *K2tog, K1*
Row 3: P2tog across to the end



Leave a long tail and cut yarn. Using a darning needle, run the yarn back thru, picking the yarn off the needle. Pull tight, this will form a circle at the end of the toe. Turn the slipper inside out and proceed to sew up the top of the slipper, stop at the change in pattern and tie off.

Fold the slipper in half and with the long tail from the cast on, sew up the heel.

Turn the slipper right side out. Make a pom, pom and attach. You may also add Dimensional paint to the bottom of the slipper to enhance traction.
